Making Process
  • Day 1: The Curd
    Fresh, raw A2 milk is safely collected in the morning from free-grazing, grass-fed indigenous Gir cows and allowed to cool naturally to room temperature. A live, probiotic-rich starter culture is then added. The milk is poured into traditional earthen clay pots natural, breathing vessels that regulate temperature completely on their own, and left undisturbed overnight to set into thick, nutrient-dense curd (Dahi). The clay pot is vital to this process; it interacts with the curd to preserve essential digestive enzymes and macro-nutrients.
  • Day 2: The Bilona Churning
    The naturally set curd is meticulously churned bi-directionally using a traditional wooden Bilona (a classic wooden churner). Bi-directional churning means the pulling rhythm alternates back and forth, spinning the wooden churner clockwise, then anticlockwise. This rhythmic motion creates a gentler, more thorough separation of fats than any automated machine can manage, protecting the delicate molecular structure of the A2 protein. The pure, nutrient-rich butter (Makhan) naturally rises and floats to the surface, where it is gently collected entirely by hand.
  • Day 3: The Wood Fire
    The hand-gathered butter is placed into a traditional stainless steel or copper vessel and positioned over a slow, natural wood fire.
